Best Ever Vegan Oven Fries

By virtue of my Scotch-Irish heritage, it is probably a given that I am a potato lover. As a nurse, a mom, a cook and a vegan ( as well as a newbie blogger) I strive to create and share healthy, nutritious and delicious recipes. I love potatoes because they are naturally nutritionally dense, naturally vegan and naturally yummy. These oven fries are crispy, salty, garlicky and wonderfully flavorful. Pre-soaking in a salt water bath, drying before baking and extra time in the oven all contribute to the crisp factor, without relying on frying. I hope you will enjoy making and eating these as much as I do!

  • 2 pounds russet or idaho potatoes, scrubbed, dried and cut into 1/4" or so strips
  • 8 cups water, to cover cut potatoes
  • 1/4 cup kosher salt, add 1/4 cup to potato water
  • 2 tablespoons refined coconut oil
  • 2 med cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons vegan parmesan
  • 1-1/2 teaspoons sea salt, to taste

Step 1

Prepare two baking sheets or jelly roll pans by covering with parchment paper, aluminum foil sprayed with high heat cooking spray or silicone baking mats.

Step 2

Prepare potato strips and place in large bowl.

Step 3

Cover potatoes with fresh water and add 1/4 cup kosher salt. Stir. Let sit for about an hour.

Step 4

Move oven racks to lowest rungs and preheat oven to 450 F.

Step 5

After 60 minutes, drain and rinse potatoes and lay on towel to dry. Gently press with paper towel to remove as much moisture as possible.

Step 6

Dry out bowl used to soak potatoes.

Step 7

Place prepared and empty baking sheets in oven for about 5 minutes.

Step 8

Add melted coconut oil and 1-2 tsp kosher salt to bowl.

Step 9

Add dried potatoes and using your hands, coat them in oil/salt mixture. Rinse hands.

Step 10

Carefully remove baking sheets from oven and divide potatoes between baking sheets, taking care to keep potatoes from overlapping.

Step 11

Place baking sheets with potatoes in oven for 30 min, flipping potatoes after 15 min.

Step 12

After 30 min, turn oven off and leave fries in oven for an additional 15 minutes.

Step 13

Remove fries from oven, toss with the garlic, basil and vegan parmesan. Enjoy!
