Chorizo with Fried Peppers and Garlic," Pimientos, Ajo y Chorizo Frito"
- 2 long green peppers
- 1 yellow bell pepper
- 2 cloves of garlic
- 2 fresh chorizo sausages
- good spanish olive oil, extra virgin, for frying
- salt, to taste
Rinse peppers,remove stems,seeds, and membranes.Cut into lengthwise slices about 1/3 of an inch wide.
Peel and finely chop garlic.Cut sausages into 1 inch lengths.
Pour enough oil into a skillet just to barely cover the bottom.When the oil gets hot fry the chorizo and pepper strips stirring often.Add garlic when food is almost done frying. Plate and serve.
