Country Style Cheddar Biscuits

Restaurant inspired recipe. I love making biscuits, square, round, plain and with cheese. Red Lobster's Cheddar biscuits is the inspiration for this recipe. My mother made the best biscuits in the world from scratch and some day with practice I will too. Biscuits were always a major part of our meal. Coming from a family of 7 children, this was one way my mother could stretch a family meal.

  • 3 cups Biscuit Mix
  • 1/2 teaspoon Salt
  • 3/4 cup buttermilk
  • 1/4 cup low fat sour cream
  • 3 tablespoons Olive Oil
  • 1 egg, beaten
  • 1/4 cup club soda, this makes the biscuits light and airy
  • 1 cup shredded cheddar cheese
  • 3 tablespoons butter, melted

Step 1

Preheat oven 425 degrees

Step 2 Making the dough

In a large mixing bowl, combine all dry ingredients first, biscuit mix and salt, then blend well. Now add wet ingredients, buttermilk, sour cream, olive oil, egg, club soda. Blend dough well.

Step 3 working dough and adding cheddar cheese

Dust work surface with flour and scrape dough on to surface. Then flour your hands and knead dough until smooth, but do not over work. Add cheddar cheese and work it into your dough.

Step 4

Pat dough flat about 3/4" to 1/2" thick and use a 3" biscuit cutter to cut out biscuits. If you are "old school" like my Mom, find the best drink glass in the house to cut and shape your biscuits.

Step 5

Place biscuits on baking sheet lined with parchment paper about 1/2" a part and bake for about 12 - 15 minutes or until golden brown. While biscuits are baking, melt 3 tablespoons of butter in the microwave for about 30 seconds. Then set aside.

Step 6 - get ready for the best biscuits.

Once biscuits are done, remove from the oven and pour the melted butter over them and serve.
