Grilled Rib-eye Sandwiches with Jalapeno Blue Cheese Spread

On the tail end of a nasty chest cold, I roamed the meat aisle at my local grocery store. I found a marked down package of thinly sliced rib-eye and had a craving! I was so tired of chicken soup! A quick and easy sandwich, I grilled the rib-eye and the bread on an inside grill. I love blue cheese with beef but wanted some spice to continue to ward off my cold. Oh yay, jalapeno, rib-eye, and blue cheese are scrumptious together! The crunch of the grill bread slathered with jalapeno blue cheese spread with a hint of green onion is healing for sure! And hello???? Who doesn't love grilled rib-eye?

  • 1 pound rib-eye steak, 3/4-inch horizontal sliced, boneless,
  • 1/2 teaspoon granulated garlic
  • 3 tablespoons olive oil, divided
  • 1/4 cup sour cream
  • 1 cup blue cheese, crumbled
  • 1/4 cup creamy goat cheese
  • 1/2 cup mild jalapeno pepper rings
  • 1 green onion, roughly chopped
  • 1/4 cup salted butter, softened
  • 8 Artisan potato-rosemary loaf or sourdough bread, 1/2-inch sliced
  • 4 large leafy green lettuce
  • 2 medium vine-ripened tomatoes, thinly sliced

Step 1: Grill Rib-eye

One hour before you plan to cook, season both sides of rib-eye generously with salt, fresh cracked pepper, and granulated garlic. Rub 1 tablespoon olive oil over steak and set aside. Prepare the grill for direct medium-high heat. Place the steaks on cooking grate and grill 3 minutes per side for medium-rare, or to your desired degree of doneness. Let meat rest for 5-7 minutes and thinly slice. Note: An inside grill pan can be used in this recipe.

Step 2: Blend Jalapeno Blue Cheese Spread

In a mini bowl or food processor, combine sour cream, blue cheese, cream cheese, 1/4 cup jalapeno rings, and green onion. Process until chunky smooth, scraping bowl at least one time in the middle of processing. Cover and refrigerate until ready to use.

Step 3: Grill Bread

Butter one side of each slice of bread. Place bread, butter side down, on a medium-hot grill and toast, one side only, until golden brown. Note: An inside grill pan can be used in this recipe.

Step 4: Assemble Sandwich

Spread unbuttered sides of bread slices generously with jalapeno blue cheese spread. Layer 4 bread slices with rib-eye, lettuce, tomato slices, and remaining jalapeno rings. Place remaining grilled bread, cheese spread down, over rib-eye and serve. Serves 4
