Grilled Saffron Potatoes

I'm preaching to the choir when I say say, "It's grilling season baby"! However and whatever season it is I sometimes get into a potato rut. And think of those starchy spuds in only a few applications. But here is a fresh, tasty alternative with my new favorite condiment Just Mayo by Hampton Creek...eat more spuds!

BenVaughn Grilled Saffron Potatoes

  • 1 teaspoon lemon zest
  • 2 tablespoons grated parmesan cheese
  • 1/2 cup grapeseed oil, slightly warm
