  • 4 eggs
  • 1 cup granulated sugar
  • 1 4 0z stick of butter
  • 1-2/3 cups unbleached white flour
  • 1 tablespoon baking soda
  • freshly grated zest of lemon
  • 1 tablespoon milk

Step One:

Preheat over to 375 degrees Fahrenheit.Measure 1/4 cup sugar and set asideBeat eggs and rest of sugar together.

Step Two:

Melt butter and stir into egg mixture.Also, add the milk and lemon zest.

Step Three:

In a separate bowl mix the baking powder and flower.Mix the egg and flour mixtures together.This will end up being very thick.

Step Four:

Place in cupcake pans and sprinkle the rest of the sugar on top.Cook for 18-20 minutes.When done let stand for 5 minutes and serve.
