Nana Young's Banana Bread

This recipe was dreamed up by my grandmother's best friend's mother, Nana Young, and has become a long-time favourite among family and friends. The secret is to let the bread cool on a wire rack once it's come out of the oven, wrap it up tightly in tin foil, and resist the temptation to slice and take a bite until the next day. This makes the bread much more moist and decadent. Enjoy!

  • 1/2 cup butter
  • 1 cup white sugar
  • 2 organic free-range eggs
  • 1/4 cup walnuts (optional), chopped
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • pinch salt
  • 1 teaspoon vanilla extract
  • 3 over-ripe bananas, mashed

Step 1

Cream butter and sugar.

Step 2

Beat in eggs.

Step 3

Add mashed bananas and chopped nuts (optional).

Step 4

In a separate bowl, sift flour, baking soda, and salt.

Step 5

Incorporate the dry ingredients with the banana mixture and mix well.

Step 6

Pour into ungreased loaf tin and bake for 1 hour in a 350 degree Fahrenheit oven.
