Perfect Pumpkin Bread

I was born and raised in the South and now am a retired attorney living near Los Angeles. I'm a competitive chili cook, foodie "contester," avid camper, and I love to travel. I created this recipe many years ago, hoping to find the perfect pumpkin bread, trying and comparing recipe after recipe, until I finally perfected my own. It's a family favorite and a Christmas tradition.

  • 16 ounces canned pumpkin
  • 2 extra large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract
  • 1/2 teaspoon brandy
  • 1/2 teaspoon orange extract
  • 1 teaspoon finely grated orange zest

Step 1: Mix

Preheat oven to 350 degrees. Grease and flour 6 mini loaf pans. Mix ingredients together well, either by hand or using a mixer at low speed. Pour into prepared loaf pans and bake at 350 degrees for 45 minutes.
