Queso Taco Chicken Parmesan

We love Chicken Parmesan and we love Mexican food with lots of cheese. So what could be better than to combine the two? With the taco seasoning adding a new flavor twist under the Parmesan coating, and the two gooey cheeses melted on top of the chicken, what's not to love? Fabulous!

  • 1 Non-stick cooking spray
  • 1/4 cup all-purpose flour
  • 1 ounce pkg. taco seasoning mix, divided use
  • 1 teaspoon seasoned salt
  • 1 cup plain breadcrumbs
  • 1/4 cup freshly grated aged parmesan cheese
  • 1/4 teaspoon cayenne
  • 1 egg,, lightly beaten
  • 1/4 cup whole milk
  • 1 tablespoon fresh lime juice
  • 2 large boneless skinless chicken breast halves,, sliced in half horizontally
  • 4 slices sharp white cheddar cheese
  • 4 ounces Colby-Jack cheese,, finely shredded
  • 1/4 cup diced and drained tomato
  • 1 thinly sliced lime

Step 1:

Heat oven to 375 degrees. Spray a 9x13-inch baking dish with cooking spray. Set aside.

Step 2:

Stir flour and 1 teaspoon of taco seasoning mix together in a pie plate. In a second pie plate, stir remaining taco seasoning mix, seasoned salt, bread crumbs, Parmesan cheese, and cayenne together. In a medium bowl, stir together egg, milk, and lime juice. Roll each chicken piece first in flour mixture, then dip in egg mixture, then roll on bread crumb mixture. Place in prepared baking dish.

Step 3:

Bake for 25 minutes or until chicken is done. Remove from oven and place a slice of cheddar on each. Divide Colby-Jack cheese on each. Return to oven for 3-4 minutes just until cheese melts.

Step 4:

Remove from oven and place each on a serving plate. Add 1 tablespoon of tomato on each and twist a lime slice on top. Serve immediately. Serves 4.
