Rasco's Chivito

This is a sandwich that my In-Laws have brought into my life. They are from Uruguay and this is there national sandwich, it has changed my life, with the flavors and the love that they cook these with. The joy that I can bring to my wife's face when i make this at home for her makes it even better. There is great flavor with the ham and egg and fresh heirloom tomatoes. Then you add the chimmichurri sauce to the mix and the flavor explodes on your tongue.

  • 2 ounces ham
  • 6 ounces Grilled Sirloin
  • 2 slices of fresh mozzerella
  • 4 hearts of palm
  • 2 sunny side up eggs
  • 1 tablespoon good quality mayonnaise
  • 1 tablespoon chimmichurri
  • 1 loaf of italian bread
  • 2 slices of bacon
  • 2 slices heirloom tomato
  • 1 head of bib lettuce

Step 1

Season the Steak with Salt and pepper, and place on grill till mid-rare(about 7 mins) please allow time to rest steak. Slice about a 8 inch slice of bread, and cut in half toast each side. Then place the mayo on the bottom bun, add ham, then slice your steak and add that on there next then place the tomato slices and the mozzarella slices then the bib lettuce. Top it off with the chimmichurri and eggs then enjoy.
