I love to make corned beef at home and I swear mine tastes better than most delis. This recipe combines my LOVE of corned beef and nachos. Since I am from Wisconsin I do know cheese so this should be a slam dunk! This recipe is a very unique pairing of Irish and Mexican fusion which I think will set this apart from any other entry. Depending on how much time you have you can substitute corn chips vs. making homemade rye chips. Also, you can buy cooked corned beef instead of grinding it.
Reuben Nachos with Rye Chips
- 2 cups dark rye flour
- 1 cup whole wheat flour
- 3 tablespoons tub crisco shortening
- 1 cup water, lukewarm
- 1 teaspoon caraway seed, freshly ground
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 pinch sugar
- 4 cups vegetable oil, for frying the chips
- 1 cup corned beef brisket, raw and ground
- 1 tablespoon corned beef spice, finely ground (optional)
- 1/4 cup baby swiss cheese, shredded (Jarlsberg is preferred)
- 1/4 cup horseradish cheddar cheese, shredded (Boar's Head is preferred)
- 1/4 cup mild cheddar cheese, shredded
- 2 tablespoons red cabbage, sauteed (optional)
- 2 tablespoons fresh sauerkraut (found in the deli department), please drain (Bubbies preferred)
- 1/4 cup diced tomatoes
- 2 tablespoons scallion
- thousand island dressing, To taste
Rye Tortilla Chips - Can substitute store bought corn chips
Mix all dry ingredients together with the shortening Add lukewarm water until dough forms Knead well by hand on a floured surface Divide into 16 balls and let sit for 15 minutes Roll out into a flat circle and place in tortilla press Heat a pan on medium high and toast tortilla 45 seconds on each side Heat oil to 350F Cut tortillas into chip size and fry for 3-5 minutes until crisp Drain on paper towel.
Typically I corn my own but as a short cut you can purchase lean uncooked corned beef. Grind the corned beef using a fine grinding blade. I typically add 1-2tbsp of finely ground corned beef spice to pump up the taste. Mix the ground corned beef thoroughly with the additional spices. Heat up a pan to medium heat, add the beef until cooked and then drain. Because the meat is already corned (pink) be careful to completely cook the meat because it will not turn a darker color If you don't want to grind the meat then purchase already cooked corned beef and cut into small pieces. I can provide my corned beef recipe if you want to corn your own brisket.
Assemble the Nachos
Preheat over to 350F Dice tomato, scallions, and red cabbage. Saute the cabbage 5 minutes until it is no longer crisp. Drain the sauerkraut thoroughly (otherwise it will make the chips soggy) Put the rye chips in baking pan Add the corned beef and the three cheeses that are finely shredded Bake approximately 15-20 minutes until the cheese has melted. Top with tomato, scallions, and cabbage. You can serve the sauerkraut on the side or on the chips. Drizzle the nachos with a little thousand island dressing and serve some on side.
