Roasted Garlic Mac and Cheese with Crispy Bacon Crust

I wanted to create the ultimate mac and cheese, and this blend of cheeses with roasted garlic gives this classic dish an amazing flavor!

  • 1 head of garlic
  • 1 teaspoon olive oil
  • 16 ounces elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 4 cups milk
  • 2 cups Parmesan cheese, grated
  • 2 cups white cheddar cheese, shredded
  • 1 cup Swiss cheese, shredded
  • 1 tablespoon dijon mustard
  • sea salt to taste
  • 8 slices of thick-cut applewood bacon
  • 1-1/2 cups plain panko bread crumbs
  • 1/3 cup fresh parsley, chopped
  • 1 lemon, for zest
  • 1/4 teaspoon black pepper

Step 1

Preheat oven to 400 degrees F. Peel back the outer layers of skin of the garlic head. Slice off the top of the head, and reserve the top for later use. Drizzle head with olive oil and wrap in a piece of foil. Roast in oven for 40 minutes. Peel the skin off of the reserved garlic tops and reserve garlic.

Step 2

While garlic is roasting, bring a large pot of salted water to a boil over medium-high heat. Add pasta and stir. Return to a boil and cook until al dente, about 7 minutes. Drain.

Step 3

In the empty pasta pot, heat butter over medium heat. Add flour and stir. Gradually whisk in milk until smooth. Remove pot from heat and add cheeses and mustard. Taste and add salt if desired.

Step 4

Squeeze roasted garlic from skin and mash with a fork until smooth. Add to milk and cheese mixture. Add pasta and mix well. Spread mac and cheese into a 13 by 9-inch buttered baking dish.

Step 5

Place bacon slices in a large pan over medium heat. Cook until almost crispy, turning often, about 7 minutes. Remove bacon from pan. Turn off heat and drop the reserved garlic tops into the hot bacon grease. Let garlic brown, about 2 minutes. Remove browned garlic and discard.

Step 6

Pour garlic-infused bacon grease over panko bread crumbs. Mix well. Stir in chopped bacon, parsley, the zest of the lemon and black pepper. Sprinkle panko mixture over macaroni and cheese.

Step 7

Bake in oven at 400 degrees F until crust is golden brown, about 20 minutes.
