Salmon Pastry Puffs With Lemon Basil Mint Sauce

The combination of salmon and puff pastry is a joy to the palette! The sauce adds a wonderful, destinct flavor! This quick and easy entree is quick to prepare and elegant to serve!

  • 4 frozen puff pastry shells
  • 8 ounces salmon fillet
  • 1 tablespoon olive oil
  • 2 tablespoons fresh basil leaves, minced
  • 2 tablespoons mint leaves, minced
  • 1/2 cup mayonnaise
  • 1 teaspoon prepared mustard
  • zest of 1 lemon, finely grated
  • juice of 1 lemon

Step 1

Place puff pastry shells on a cookie sheet. Bake at 425 degrees F. for 18 minutes as directed on the package. Allow to cool. Use a fork to remove the top halves of each puff pastry.

Step 2

Place salmon on broiler pan. Brush with olive oil. Broil salmon for about 10 minutes or until fully cooked.

Step 3

In a 1-quart saucepan, place the basil, mint, mayonnaise, mustard, lemon zest and lemon juice. Whisk until you get a smooth sauce. Cook and stir over medium heat until sauce just comes to a boil.

Step 4

Cut salmon into 4 portions. Place each portion on a puff pastry shell bottom. Drizzle each with sauce. Cover each with a puff pastry shell top. Serve immediately.
