Thai Sweet Chili and Ginger Pasta

Thai sweet chili sauce and fresh ginger add a lot of flavor to a very simple dish. This recipe uses cooked chicken but shrimp could also be used. To add a little more heat, additional chili sauce could be used or try some Sriracha sauce for an even bolder flavor. I love the convenience of the new chop salads so I like to serve this pasta with the fresh vegetables.

Glory Thai Sweet Chili and Ginger Pasta
  • 8 ounces angel hair pasta, cooked to al dente
  • 2 fluid ounces olive oil
  • 5 ounces mushrooms, sliced
  • 1/4 cup red pepper, diced
  • 1/4 cup onion, diced
  • 2 cloves garlic, minced
  • 1/3 cup chicken broth
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons soy sauce
  • 2 tablespoons thai sweet chile sauce
  • 1 cup chicken, cooked and chopped
  • 2 tablespoons sesame seed
  • 1/2 cup fresh salad mix, optional

step 1

Break pasta into 3 inch sections and cook in boiling water until al dente.

In a large skillet over medium heat, saute mushrooms, pepper, onion and garlic in olive oil until peppers are almost tender. Reduce heat to low and add chicken broth, fresh ginger, soy, sweet chili sauce and chicken. Simmer 2 to 3 minutes. Add drained pasta and garnish with sesame seeds. Serve with fresh salad mix, if desired
